Two borders, one fire.
My grandmother cooked over mesquite in Hermosillo. My mother cooked over mesquite in Tucson. I just moved the fire to Phoenix.
Ember & Agave opened in 2022 in a converted Roosevelt Row bungalow. The kitchen has no gas line by choice: every dish is grilled, smoked or roasted over Sonoran mesquite and ironwood. Tortillas are rolled by hand at 4pm, carne asáda rests over the coals at 5, and the first pour of mezcal goes out when the doors open.
